partitions & fresh installs

Usually I wipe the drive during a fresh install, even though I dont change the size, type or number of the partitions.

It has never been clear to me that this is necessay. What does the "erase" button in druid do? Does it clear the contents of a partition or blow it away entirely?

I think "erase" will delete the partition. Then you have to recreate it.
If you aren't going to change the layout of the disk, just set the mountpoint and format the partition.

I dont see how a person would do what you suggest through a normal graphical install process. Dont seem to be able to make those kinds of choices from the dialog boxes that are presented by the installer.
