Looks like the only disks you could be using for RAID are /dev/sdb and /dev/sdc. Are you doing RAID1, i.e. mirroring these two disks?

Yes, Microsoft is correct to use "should". Best practice is to have only one ESP on a disk.

No it is not "required". It is just a convention that the ESP is mounted at /boot/efi on Linux systems. It can be mounted wherever you like - if you know what you are doing.

Why in heavens would you want to do that! GRUB is a multiboot loader as is rEFInd. Using a boot loader to launch another boot loader has no technical advantage.

That is a Legacy GRUB MBR - not a Windows-provided MBR. See the GRUB Stage 1 message about "hard disk read error" embedded in it.
