You can mount it that way and also there is existing data in /home/jaquero since I assume this is your home directory. If mounted to that mout existing data would disappear. You need to mount to a empty directory.

If it is mounted all the time then how about a softlink to it. Use a command like this.
ln -s /mnt/C/"Documents and Settings"/Jonathan/"My Documents" /home/jaguero/Documents
